Chemmeen Roast (Shrimp/Prawns)

Recipe: Chemmeen Roast

Summary: A mouth watering authentic Kerala dish made from shrimp/prawn.

Ingredients

  • prawns – 1 pound
  • onion – 2 medium thinly sliced
  • pearl onions – 5 nos chopped
  • ginger – garlic paste – 1tbspn
  • masala powder
  • green chillies – 4 splitted lengthwise
  • tomato – 2 nos
  • turmeric powder – 1/4tspn
  • chilly powder – 2tbspn
  • coriander powder – 1 1/2tspn
  • curry leaves
  • coconut oil – 4tbspn
  • salt – to taste

to make masala powder

  • fennel seeds – 1tspn
  • black peppercorns – 1tspn
  • 4-5 small half inch cinnamon sticks
  • clove – 1
  • cardamom – 1
to marinate
  • red chilly powder – 1tspn
  • turmeric powder – 1/4 tspn
  • fresh black pepper powder – 1/2tspn
  • fennel seeds – 1/2tspn
  • ginger- garlic paste – 1/2tspn
  • curry leaves
  • lemon juice – 1tbspn
  • salt – to taste

Instructions

  1. Make a paste with the ingredients in the” to marinate” section. Clean the shrimp and marinate it.Let it marinate for 1 hr in the refrigerator.
  2. Heat oil in a kadai,fry till prawns are half cooked.And keep aside.
  3. In this oil, saute chopped onions untill translucent.
  4. Add ginger,garlic,masala powder,and green chillies.Saute for 1 min.
  5. Add chopped tomatoes, with turmeric powder,chilly powder,coriander powder,curry leaves,salt.
  6. stir and cook untill tomatoes are mashed well. 8.Add fried prawns to this paste,and let it cook on low flame for 5 minutes.
  7. If there is no water,pour 1/4 cup water and mix well.Again cook for 5 minutes to form a thick gravy.
  8. Remove from fire and serve hot.
  9. Serve with paratha, pathiri, or rice.
