Recipe: Coconut Roll

Ingredients

INGREDIENTS FOR DOSA:
  • all-purpose flour – 1 cup
  • white sugar – 1 tspn
  • baking powder – 1 tspn
  • egg – 1
  • milk – 1 cup
  • vegetable oil – 2 tbspn
  • water – 1/2 cup
  • salt – to taste
FOR FILLING:
  • Grated coconut         1 cup
  • sugar                  1/4 cup

Instructions

  1. In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the center, and pour in milk, egg , water and oil. Mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each dosa. Brown on both sides.
  3. Mix together coconut and sugar.Fill each dosa with 1 tbspn of coconut mixture.Roll the dosa’s and serve.
