Recipe: Aviyal
Summary: Aviyal is one of the typical Kerala Cuisine and forms an important part of the “Sadhya” (Kerala Feast). It is basically cooked with a mixture of vegetables topped with grated coconut and curd.
It is believed that Avial was invented by Bhima, one of the Pandava brothers during their second exile. He was considered to be one of the greatest cooks in Hindu Mythology. Other cook is Nala.
Ingredients
- Mixed vegetables (carrots, ash gourd, drumsticks, potatoes, onions, yam ) …… 2 cups
You may use any other vegetables of your choice. - Grated coconut….. 1 cup
- Chilli powder… 1/2 tspn
- Turmeric powder… 1/2 tspn
- Green chilli… 2 nos
- Yogurt…. 2 tbspn
- Cumin seeds…. 1 tspn
- Curry leaves… for garnish
- Coconut oil…. for garnish
- Water
- Salt…. to taste
Instructions
- Take the mixed vegetables in a pan and add 1 cup water.
- Add chilli powder, turmeric powder and salt and allow it to cook.
- Now take the grated coconut in a grinder. Add the green chillies and cumin seeds.
- Coarse grind the coconut mixture. (do not add too much water while grinding)
- Now add this coconut mixture to the cooked vegetables.
- Let it cook for 5 mins more.
- Now add the yogurt to this.( do not cook too much after adding the yogurt)
- Turn off the heat.
- Garnish with curry leaves and 1 tspn of coconut oil.
- Serve with rice.
