Yesterday I ran out of Veggies in my refrigerator and all I found was a Cauliflower and a pack of frozen Green peas. There were also some roasted peanuts in the pantry so I thought of preparing Gobi Mattar with crushed Peanuts. Its a simple recipe with not much of spices and the crushed peanut gives it a very good flavour.
Gobi Matar Stir fry can be had with rotis or parathas. It can also be prepared in a gravy form. Boiled Potatoes can also be used and you get a Gobi Aloo Mattar instead of just Gobi Matar.
Ingredients
- Cauliflower…1 no.
- Green Peas…. 1 cup
- Chopped Onions…..1 cup
- Chopped Tomato….. 1/2 cup
- Ginger Garlic paste…. 1 tspn
- Crushed Peanuts…. 2 tbspn
- Whole Garam masala which includes… 1
- Cinnamon Stick, 1 bay leaf, 3 cloves, 1 black cardamom
- Turmeric Powder…1/2 tspn
- Red chilli powder… 1 tspn
- Black pepper powder… 1/2 tspn
- Oil
- Salt to taste
- Water
Instructions
- Clean the cauliflower and take out the florets.
- Boil the cauliflower florets in water till they are cooked.
- Heat oil in a pan. Add the whole garam masala.
- Add the onions and saute well till they are translucent.
- Add the ginger garlic paste and mix well.
- Now add the chopped tomatoes and fry well.
- When the tomatoes get mashed add the turmeric powder, red chilli powder and crushed peanuts. Saute well.
- Now add the cooked cauliflower and green peas. Mix well. Add the black pepper powder and salt and let it cook for around 10 minutes.
- Garnish with fresh cilantro leaves.
- Serve with rotis or as an accompaniment with rice.
