Vegetable Biryani
Recipe: Vegetable Biryani
Summary: Easy & Healthy Veg Biriyani for Vegetarians. No Ghee, or other fatty ingredients used.
Ingredients
Rice …2 cups
Cauliflower, Carrots, Potatoes, Green Peas, Tomatoes… 1/2 cup each
Cloves.. 3-4
Cinnamon Sticks … 2
Bay leaf …. 1
Ginger garlic Paste… 2 tspn
Red Chilli powder…. 1tspn
Turmeric powder…1/2 tspn
Pepper powder … 1/2 tspn
Garam masala powder…. 1tspn
Yogurt…2 tbspn
Water
Salt to taste
Coriander Leaves (for garnish)
Fried Cashew nuts & raisins ….1 tbspn each
Oil (preferably Canola or Sunflower oil)
Instructions
Soak the rice for about 30 mins.
In a big pot boil water. When water starts to boil add cardomom, Cinnamon, bay leaf, and salt. Let boil for sometime.
Then add the rice and cook. The rice should be only 70% cooked.
In another pan heat 2 tablespoon oil.
Add onions and saute. When Onion turns translucent add the ginger garlic paste.
To that add the turmeric powder, chilli powder, garam masala powder and pepper powder.Saute for another 2-3 mins.
When the masala leaves the oil add the vegetables and salt .
Add a cup of water.Mix well.
Cover and cook the vegetables for 10 mins.
Once it is cooked add the yogurt.
Cover and cook for 10 more mins. Don’t not add too much water.
Now to layer the biryani. Take a big bowl.First add half of the cooked rice.
On top of that add the cooked vegatables. Again, add the rice.
Garnish the top layer with coriander leaves, cashews and rasins.
Cover it with a a lid. Cook on low flame for about 10 mins.
This can also be coooked in an oven. Pre heat the oven on 350 degree Farenheit. Then place the biryani bowl in it and cook for about 10 mins.
Serve the Biriyani with cucumber raita and pickle.
